The threaded insert to attach the hinges to the hood had one of the nut insert fall off. What the hell do I do now?

What did it do, fall inside the frame of the hood? I'll have to look at mine and take pre-evasive action to make sure this doesn't happen to mine. I'd give AAR a call and see what they have to say. Probably not the first time it's happened. Keep us informed...

Is your's a single plate for both nuts? If it is you should be able to fish around inside the cavity and recover the plate and get one bolt back in it enough to line it up and reattach/rivet it back onto the channel again. Yes, it is going to be a pain in the tuc-as and you'll throw a wrench or two in the process, but it beats cutting it open again. A little finess goes along way.

I would probably just epoxy it back in place, but I'd really have to access the situation first.
